Favorite Beef Vegetable Soup

We spend 1 weekend in the fall making soups to have in the freezer. This one is one of our favorites. I use my homemade beef broth in place of the bouillon.

We spend 1 weekend in the fall making soups to have in the freezer. This one is one of our favorites. I use my homemade beef broth in place of the bouillon.

Ingredients

  • Stewing Beef
  • Onions
  • Tomatoes
  • Tomato Soup
  • Carrots
  • Corn
  • Green Beans
  • Celery
  • Potatoes
  • Beef Bouillon Cubes
  • Thyme
  • Oregano
  • Marjoram
  • Bay Leaf
  • Salt
  • Pepper

Instructions

  1. Place beef in dutch oven
  2. Cover with water
  3. Bring to a boil, then reduce heat
  4. Add 1 small chopped onion
  5. Simmer about 1 hour until beef is tender
  6. Add remaining onion and next 8 ingredients
  7. Cook 30 minutes
  8. Add seasonings and cook slowly for 2 hours or more
  9. Better the second day, if you can wait!
