Description
Just like the name says…fantastic!! This recipe is a favorite with my toddler. It originally came from better baby food cookbook. It provides lots of nutrients for fussy eaters (young and old)!
Ingredients
- Vegetable Oil
- Garlic
- Onion
- Carrot
- Black Beans
- Chicken Stock
- Ground Cumin
- Fresh Parsley
Instructions
- In a large skillet, heat oil over medium-high heat
- Add garlic, onions and carrots
- Cook for 4-5 minutes or until onions are softened
- Stir in beans, chicken stock and cumin
- Bring to a boil
- Reduce heat to medium-low and simmer, covered, for about 20-25 minutes or until the carrots are soft
- In a food processor or blender, puree soup in batches until smooth
- Sprinkle with parsley before serving
