Fabulous Vegetarian Chili

A really great vegetarian chili, i like to add in 1 or 2 jalapeno peppers and/or crushed chili flakes

A really great vegetarian chili, i like to add in 1 or 2 jalapeno peppers and/or crushed chili flakes

Ingredients

  • Oil
  • Onion
  • Green Bell Pepper
  • Carrot
  • Fresh Tomatoes
  • Garlic Cloves
  • Pinto Beans
  • Red Kidney Beans
  • Crushed Tomatoes
  • Firm Tofu
  • Water
  • Frozen Whole Kernel Corn
  • Salt
  • Chili Powder
  • Cumin
  • Cayenne Pepper
  • Fresh Ground Black Pepper

Instructions

  1. Heat oil in a 5-qt dutch oven
  2. Add onions, green peppers and carrots
  3. Saut over med heat until tender
  4. Add fresh tomatoes, garlic, beans, crushed tomatoes, tofu, water, corn, salt, chili powder, cumin and cayenne pepper
  5. Simmer for 45-60 minutes or until done, stirring often, adjusting all seasonings to suit taste
  6. About halfway through cooking time season with black pepper and more salt if needed
