This will bring the tropic to you! Serve it on bread, in a cake glaze a chicken or over cream cheese as a spread.
Love to see what you do with it!
Will make about 8-10 (8 oz) half pints for gift giving or about 160 servings, 1 tbsp. Each for your own consumption. 😉

Ingredients

  • Mangoes
  • Bananas
  • Lemon Juice
  • Vanilla Bean
  • Fruit Pectin
  • Butter
  • Sugar
  • Banana Liqueur

Instructions

  1. Crush bananas with lemon juice to prevent browning
  2. Set aside
  3. Meanwhile prepare boiling water canner
  4. Heat 7-10 half pint glass preserving jars with lids and bands in simmering water until ready for use
  5. Do not boil
  6. Set bands aside
  7. Combine mangoes, bananas and vanilla in a 6- or 8-quart saucepan
  8. Gradually stir in pectin
  9. Add up to 1 / 2 tsp butter to reduce foaming, if desired
  10. Bring mixture to a full rolling boil that can not be stirred down, over high heat, stirring constantly
  11. Add entire measure of sugar and liqeuer if using, stirring to dissolve
  12. Return mixture to a full rolling boil
  13. Boil hard 1 minute, stirring constantly
  14. Remove from heat
  15. Skim foam if necessary
  16. Carefully remove vanilla and ladle hot jam into hot jars leaving 1 / 4 inch headspace
  17. Wipe rim
  18. Center lid on jar
  19. Apply band until fit is finger
  20. Process in a boiling water canner for 10 minutes, adjusting for altitude
  21. Remove jars and cool
  22. Check lids for seal after 24 hours
  23. Lid should not flex up and down when center is pressed
