Ingredients

  • Nonstick Cooking Spray
  • White Bread
  • Turkey Sausage
  • Eggs
  • Skim Milk
  • Light Sour Cream
  • Monterey Jack Pepper Cheese
  • Reduced-fat Sharp Cheddar Cheese
  • Salsa

Instructions

  1. Coat a 9- or 10-inch baking dish with nonstick cooking spray
  2. Spread bread cubes evenly in the baking dish
  3. Set aside
  4. Crumble turkey sausage into a medium skillet
  5. Cook until brown
  6. Drain off fat
  7. Pat with paper toweling to remove excess fat
  8. Sprinkle cooked sausage over bread cubes in baking dish
  9. In a medium mixing bowl, beat together eggs, milk, and sour cream
  10. Stir in pepper jack and cheddar cheeses
  11. Pour egg mixture over sausage in baking dish
  12. Cover and refrigerate for at least 2 hours
  13. Uncover and bake in a 325f oven for 35 to 40 minutes or until center is set and top is golden brown
  14. Remove from oven
  15. Let stand for 5 to 10 minutes before cutting
  16. To serve, cut estratos into wedges
  17. Spoon some salsa on top of each serving
