Escalloped Eggplant

Similar to eggplant parmigiana, but a little lighter and less saucier, and is more suitable as a side dish.

Similar to eggplant parmigiana, but a little lighter and less saucier, and is more suitable as a side dish.

Ingredients

  • Eggplants
  • Tomatoes
  • Onion
  • Butter
  • Salt
  • Dried Basil Leaves
  • Mozzarella Cheese
  • Dried Breadcrumbs
  • Parmesan Cheese

Instructions

  1. Preheat oven to 450 degrees
  2. On medium-size ovenproof platter, arrange eggplant slices, then tomato and onion slices
  3. Drizzle with 1 / 4 cup melted butter
  4. Sprinkle with salt and basil
  5. Bake, covered, 20 minutes
  6. Cut mozzarella slices in thirds
  7. Arrange over top
  8. Stir crumbs into rest of melted butter
  9. Sprinkle over top
  10. Then sprinkle with parmesan cheese
  11. Bake, uncovered, 10 minutes, or until cheese is bubbly
