This is a great recipe that my mother in law used to make.
Ingredients
- Flour
- Salt
- Pepper
- Boneless Chicken Breasts
- Olive Oil
- Onion
- Margarine
- Chicken Broth
- Lemon Juice
- Thyme
- Parsley
Instructions
- Combine flour, salt and pepper in a ziploc
- Add chicken and shake to coat
- Remove chicken and reserve excess flour
- In a large skillet warm 1 tbsp oil over medium heat
- Add chicken and brown on one side then flip chicken and brown on the other side transfer chicken to plate
- Coarsely chop onion
- Add margarine to skillet, when it has melted add onion soften for 2-3 minutes add reserved flour cook for one minute
- Add broth, 2 tbsp of lemon juice and thyme and bring mixture to a boil
- Stir constantly
- Return chicken to skillet
- Cook until chicken is tender about 5 minutes
- Stir remaining juice into sauce
- Cook 2 minutes
