  • Cucumber
  • Fava Beans
  • Tomatoes
  • Of Fresh Mint
  • Fresh Flat-leaf Parsley
  • Red Onion
  • Tahini
  • Fresh Lemon Juice
  • Garlic Cloves
  • Ground Red Pepper
  • Salt & Freshly Ground Black Pepper

Instructions

  1. Pare and seed cucumber
  2. Cut cucumber lengthwise into eighths
  3. Dice
  4. In large mixing bowl, combine all ingredients
  5. Toss well and serve at room temperature or warm slightly
  6. Each serving provides: 3 / 4 fat, 1 1 / 4 vegetables, 1 / 4 protein, 2 breads, 10 optional calories
