These are so good we could eat them like candy. They take a little work but are so worth it!

Ingredients

  • Chicken Breasts
  • Oyster Sauce
  • Olive Oil
  • Cabbage
  • Garlic Cloves
  • Carrots
  • Red Pepper
  • Orange Bell Pepper
  • Yellow Pepper
  • Broccoli
  • Spinach
  • Bean Sprouts
  • Salt
  • Chinese Five Spice Powder
  • Eggs
  • Egg Roll Wraps
  • Canola Oil

Instructions

  1. Tenderize and marinade chicken in oyster sauce overnight
  2. Dice chicken and cook in 2 tablespoons of olive oil
  3. Stir together cornstarch and soy sauce and add to chicken mixture
  4. Thinly slice garlic, shred carrots and chop cabbage, broccoli and peppers
  5. Steam until vegetables are tender
  6. Chop spinach and add to steamed vegetables
  7. Toss until spinach is slightly wilted
  8. Drain vegetables of excess water and mix with chicken in large bowl
  9. Whisk eggs
  10. Lay out six egg roll wraps at a time
  11. Wet edges with whisked egg
  12. Drop 2 tablespoons of filling across bottom third and tightly roll from bottom corner tucking in both sides
  13. Set aside on wax paper
  14. Repeat 10 times
  15. In large skillet fry egg rolls until all sides are golden brown
  16. Drain on paper towel
  17. Serve with low sodium soy sauce if desired
