Eggplant Vermicelli

Ingredients

  • Vermicelli
  • Olive Oil
  • Eggplant
  • Onion
  • Garlic Cloves
  • Dried Basil
  • Dried Oregano
  • Crushed Red Pepper Flakes
  • Zucchini
  • Fresh Mushrooms
  • Tomatoes
  • Parmesan Cheese

Instructions

  1. Cook vermicelli according to package directions
  2. Drain and set aside
  3. Coat a wok or large nonstick skillet with cooking spray
  4. Add oil, and heat on med-high heat until heat
  5. Add in eggplant and the next 5 ingredients
  6. Stir-fry until vegetables are tender
  7. Add in zucchini, mushrooms, and chopped tomatoes
  8. Stir-fry 2 minutes or until mixture is thoroughly heated
  9. Combine vermicelli and vegetable mixture on a serving platter
  10. Toss gently
  11. Check seasoning and add salt / pepper if needed
  12. Sprinkle parmesan cheese over the top
