I was surprised to have such trouble finding a low fat and healthy version of this wonderful breakfast, so here is my favorite!it is only 165 calories!

Ingredients

  • English Muffin
  • Fat-free Cheddar Cheese
  • Butter
  • Egg Beaters Egg Substitute
  • Water
  • Salt
  • Pepper
  • Cooking Spray

Instructions

  1. Toast english muffin
  2. Heat pan over medium high heat and coat with cooking spray
  3. Mix water, egg, salt and pepper in a bowl and pour into pan
  4. Cook until egg is cooked
  5. Spread 1 / 2 tbsp, butter spread on each half of english muffin
  6. Top one half with egg and cheese and top with the other half
  7. Wait a few seconds for cheese to begin to melt
  8. Eat!
