I was very happy to find this low fat breakfast burrito; the flavor with a little salsa was so good.

I was very happy to find this low fat breakfast burrito; the flavor with a little salsa was so good.

Ingredients

  • Egg Whites
  • Nonfat Cottage Cheese
  • Tomatoes
  • Sweet Green Peppers
  • Sweet Onion
  • Black Beans
  • Whole Wheat Tortillas
  • Sea Salt
  • Fresh Pepper

Instructions

  1. Preheat oven to 170f and place tortilla wraps in oven to warm while preparing remaining ingredients
  2. In a small bowl whisk egg whites, cottage cheese, salt and pepper
  3. In a medium skillet coated with cooking spray, saut vegetables and beans until soft
  4. Pour the egg / cottage cheese mixture over vegetables and cook until mixture sets
  5. Once firm, divide egg mixture among the warmed tortillas
  6. Roll each into a burrito
  7. Garnish with low-fat, low sodium salsa
