Easy Thai Ish Noodles And Vegetables

This is a fairly good approximation of a thai sauce; all of the ingredients are available at your standard kroeger/ralph's/shaw's kind of supermarket.

This is a fairly good approximation of a thai sauce; all of the ingredients are available at your standard kroeger/ralph's/shaw's kind of supermarket.

Ingredients

  • Chunky Peanut Butter
  • Soy Sauce
  • Tomato Puree
  • Dry Sherry
  • Lime, Zest Of
  • Fresh Lime Juice
  • Brown Sugar
  • Chili Paste With Garlic
  • Vegetable Oil
  • Garlic Cloves
  • Peanuts
  • Scallions
  • Red Bell Pepper
  • Snow Peas
  • Mushrooms
  • Broccoli Florets
  • Spaghetti

Instructions

  1. I use whole wheat spaghetti
  2. To make sauce: place peanut butter in medium-sized bowl
  3. With fork stir in soy sauce, tomato sauce / puree, sherry, lime zest, lime juice, brown sugar, and chili paste
  4. Heat oil in small saucepan over medium heat
  5. Add the garlic and cook 1 minute
  6. Stir in the peanut sauce and keep warm over low heat
  7. Do not let the sauce simmer (or, heavens forbid, boil — it will be too thick to use
  8. Just keep it warm
  9. Combine the vegetables and peanuts in a bowl and set aside
  10. Cook your pasta of choice according to directions
  11. After draining, place in large bowl
  12. Pour the sauce on the noodles and toss
  13. Sprinkle the vegetables across the top and mix lightly
  14. Serve immediately
  15. You can add cooked chicken or shrimp, or any other combination of vegetables you like
