Easy and delicious spaghetti squash casserole. It can be made low carb, and gluten free.

Ingredients

  • Spaghetti Squash
  • Spaghetti Sauce
  • Parmesan Cheese
  • Mushroom
  • Sweet Onion
  • Ground Beef
  • Italian Sausage
  • Butter
  • Olive Oil
  • Mexican Cheese
  • Sour Cream

Instructions

  2. Cut spaghetti squash in half
  3. Scoop out seed from center
  4. Put in baking pan cut side down
  5. Pour in 2 cups water
  6. Cover with foil
  7. Bake 350 degrees for approximately one hour – depending on size
  8. Test for doneness with a fork
  9. Fork should pierce the squash easily

  11. When done take fork / spoon and scrape out the fibers of the squash
  12. Drain well to get rid of liquid
  13. While squash is baking:

  15. Brown up ground beef and italian sausage
  16. Drain
  17. Set aside
  18. While squash is baking about 1 / 2 way through :

  20. Dice up onions and mushrooms
  21. 5
  22. Sautee onion in butter / oil
  23. When onions start to brown add mushrooms
  24. When done add in spaghetti sauce and / or fire roasted tomatoes
  25. Heat til warm
  26. Remove from heat

  28. Mix in baked squash, ground beef, sausage and parmesan cheese
  29. Transfer to baking dish
  30. Top with 1 cup
  31. Shredded cheese

  33. Bake 350 until cheese is melted and slightly browning
  34. About 1 / 2 hour

  36. Remove from oven serve
  37. Serve with spoonful of sour cream or plain greek yogurt
