Easy Raisin Bran Muffins

I got this recipe from the latest everyday food magazine. It sounded too easy to resist and it really was! It has just the right amount of sweetness. Yummy!

Ingredients

  • Vegetable Oil
  • Raisin Bran Cereal
  • Milk
  • Whole Wheat Flour
  • All-purpose Flour
  • Baking Powder
  • Ground Cinnamon
  • Salt
  • Egg
  • Dark Brown Sugar

Instructions

  1. Preheat oven to 400 degrees
  2. Lightly oil a 6 cup standard muffin tin, or use paper liners
  3. In a medium bowl, combine cereal and milk
  4. Let stand until softened, about 5 minutes
  5. In a small bowl, whisk together flours baking powder, cinnamon, and salt
  6. Stir oil, egg, and sugar into cereal mixture
  7. Fold in flour mixture
  8. Divide batter among cups
  9. Bake until a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes
  10. Cool in tin 5 minutes, then turn out onto a wire rack
  11. Let cool completely, or serve warm
  12. Store up to 5 days at room temperature in a resealable plastic bag
