Easy Chicken Tetrazzini

Ingredients

  • Reduced-calorie Margarine
  • Scallion
  • Button Mushrooms
  • All-purpose Flour
  • Garlic Powder
  • Black Pepper
  • Fat-free Chicken Broth
  • Nonfat Milk
  • Skinless Chicken Breast
  • Pimiento
  • Cooking Sherry
  • Parmesan Cheese
  • Spaghetti

Instructions

  1. Melt margarine in a large saucepan over medium-high heat
  2. Add scallions and mushrooms
  3. Cook until tender, stirring, about 5 minutes
  4. Combine flour, garlic powder, pepper, broth and milk in a small bowl
  5. Mix until well blended
  6. Add flour mixture to saucepan
  7. Cook until mixture boils and thickens, stirring constantly, about 10 minutes
  8. Add chicken, pimentos and sherry
  9. Cook until thoroughly heated, stirring occasionally, about 2 minutes
  10. Stir in cheese and add cooked spaghetti
  11. Toss gently
  12. Yields about 1 cup per serving
