Duck Tareko Crispy Deep Fried Duck Marinated In Nepali Spices

Ingredients

  • Duck
  • Cumin Powder
  • Chili Paste
  • Ginger Paste
  • Garlic Paste
  • Szechwan Pepper
  • Nutmeg
  • Turmeric
  • Molasses
  • Honey
  • Salt And Pepper
  • Oil

Instructions

  1. In a small bowl, combine cumin, ginger, garlic, timur, nutmeg, half teaspoon of turmeric, salt and pepper
  2. Mix well
  3. Clean duck
  4. Wipe dry
  5. Rub duck inside and out with the spice mixture
  6. Let rest to marinate for at least eight hours
  7. Place marinated duck in a steamer and steam for at least one hour
  8. Remove from steamer and let cool down
  9. Combine a half teaspoon of turmeric, chili paste, molasses, honey and salt, and smother over the duck, inside and out
  10. In a deep fryer heat oil to 360f
  11. Dip the steamed duck in frying oil
  12. Fry duck, turning periodically, until the duck skin is golden brown and crispy
  13. Remove from oil and place on paper towel to absorb excess oil
  14. To serve, cut crispy duck into bite-size pieces
  15. Serve with rice pilaf, accompanied with mango chutney
