I love learning about my heritage, and this cake is a true irish dessert! I've made this cake for many holidays and it is always a big hit. It is simple, delicious, and might give you a little buzz!

Ingredients

  • Brown Sugar
  • Butter
  • Whipped Cream
  • Pecans
  • Apple Cinnamon Quick Bread Mix
  • Apple
  • Water
  • Irish Whiskey
  • Oil
  • Egg
  • Heavy Whipping Cream
  • Powdered Sugar
  • Cinnamon

Instructions

  1. Preheat oven to 350 degrees f
  2. Combine, in small saucepan over low heat: brown sugar, butter and 2 tablespoons of whipping cream
  3. Cook and stir just until butter is melted
  4. Remove from heat
  5. Stir in pecans
  6. Pour mixture into bottom of ungreased 9-in round cake pan or 9-in square pan: set aside
  7. Combine, in large bowl, all cake ingredients
  8. Stir 50-75 strokes by hand until mix is moistened
  9. Spoon batter over caramel mixture, making sure caramel is completely covered
  10. Bake at 350f for 40-50 minutes or until toothpick inserted in center comes out clean
  11. Cool 1 minute, then invert onto serving plate
  12. Beat, in small bowl, remaining whipping cream until soft peaks form
  13. Add powdered sugar and whiskey
  14. Beat until stiff peaks form
  15. Spread whipped cream mixture on top of cake
  16. Sprinkle lightly with cinnamon
  17. Store in refrigerator
