Drunken Chicken Ii

Ingredients

  • Water
  • Chicken Breast
  • Ginger
  • Scallion
  • Salt
  • Sherry Wine
  • Cilantro

Instructions

  1. Bring water to boil, then add chicken breast, ginger, scallion and salt
  2. Boil 15 minutes
  3. Remove to bowl
  4. Debone chicken while warm
  5. Remove ginger and scallion and discard
  6. Place chicken and its stock in container
  7. Add sherry
  8. Cover and refrigerate 1-5 days
  9. When ready to serve, cut chicken into 1-inch pieces
  10. Arrange on platter
  11. Pour jellied liquid over chicken and decorate with cilantro
  12. Serve cold
