Dried Cherry Toasted Almond Turkey Salad Sandwiches

Ingredients

  • Slivered Almonds
  • Plain Fat-free Yogurt
  • Low-fat Mayonnaise
  • Fresh Ginger
  • Crushed Red Pepper Flakes
  • Celery
  • Red Onion
  • Dried Cherries
  • Golden Raisin
  • Cooked Turkey Breast
  • Whole Wheat Pita Bread

Instructions

  1. Heat a small nonstick skillet over medium-high heat
  2. Add almonds, cook 2 minutes or until toasted, stirring constantly
  3. Remove from heat
  4. Set aside
  5. Combine yogurt, mayonnaise, ginger and crushed red pepper in a medium bowl
  6. Add almonds, celery and next four ingredients, stirring well to combine
  7. Spoon 1 / 3 cup turkey mixture into each pita half
