Double Chocolate Espresso Cookies

From toh, these sound fabulous!!i mean come on–2 of my favorite things–espresso and chocolate!! So i am going to put them here until i can bake them.

Ingredients

  • Unsweetened Chocolate Squares
  • Semi-sweet Chocolate Chips
  • Butter
  • Instant Coffee Granules
  • Sugar
  • Eggs
  • All-purpose Flour
  • Baking Powder
  • Salt

Instructions

  1. In a small heavy saucepan, melt unsweetened chocolate, 1 cup chocolate chips and butter with coffee granules
  2. Stir until smooth
  3. Remove from the heat
  4. Set aside to cool
  5. In a small mixing bowl, beat sugar and eggs for 3 minutes or until thick and lemon colored
  6. Beat in the chocolate mixture
  7. Combine the flour, baking powder, and salt
  8. Add to chocolate mixture
  9. Stir in remaining chips
  10. Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets
  11. Bake at 350 for 10-12 minutes or until puffed and tops are cracked
  12. Cool for 5 minutes before removing to wire racks
