Ingredients

  • Yellow Cake Mix
  • Butter
  • Quick-cooking Oats
  • Frozen Blueberries
  • Seedless Raspberry Jam
  • Lemon Zest

Instructions

  1. Preheat oven to 350 degrees f
  2. Position oven rack in middle of oven
  3. Spray the bottom only of a 13 x 9-inch metal baking pan with nonstick cooking spray
  4. Set aside 3 tablespoons of the cake mix
  5. Place the remaining cake mix and melted butter in a large bowl
  6. Blend for 1-2 minutes with an electric mixer set on low speed until smooth
  7. Stir in oats until blended
  8. Press half of mixture evenly into prepared pan
  9. Stir together the blueberries, jam, reserved 3 tablespoons cake mix, and lemon zest in a large mixing bowl
  10. Spoon and spread berry mixture over prepared crust
  11. Top with reserved crumb mixture and press down gently
  12. Bake for 30-34 minutes or until topping is set and firm to the touch
  13. Transfer to wire rack and cool completely
