I personally requested my fire chief husband to include this recipe for review as it is my all time favorite. I could eat it for breakfast, lunch and dinner and have been known to do so. Please try this recipe and comment. Enjoy!

Ingredients

  • Long Grain Rice
  • Water
  • Butter
  • Chicken Bouillon Cube
  • Salt
  • Mild Sausage
  • Onion
  • Red Bell Pepper
  • Celery

Instructions

  1. Place 3 cups of water and 1 t salt in a 5 quart pot
  2. Bring water to a boil and add 1 chicken bullion cube and one t of butter
  3. Add 1 1 / 2 c long grain rice
  4. Bring water back to a boil, stirring constantly
  5. Turn heat down to a simmer and cover with lid
  6. Cook 15 minutes
  7. Let stand 10 minutes until all of the water has been absorbed
  8. Chop onion, red pepper and celery
  9. Set aside
  10. In another skillet, brown sausage and add chopped vegetables to sausage
  11. Brown over medium heat for 5-10 minutes
  12. Drain sausage / vegetable mixture well,
  13. Combine the rice with the sausage mixture and stir, heating the mixture thoroughly
  14. Add salt and pepper to taste
  15. If you like the dirty rice spicier, you can add a few drops of your favorite hot sauce to taste
  16. In summer, you can add one or more medium tomatoes, chopped
