Key lime pie with graham cracker crust. Cooking time includes time for pie to chill.

Ingredients

  • Plain Gelatin
  • Sugar
  • Salt
  • Eggs
  • Key Lime Juice
  • Water
  • Lime Peel
  • Heavy Cream
  • Graham Cracker Crust

Instructions

  1. Mix the gelatin, half of the sugar and the salt in a saucepan
  2. In another pan, beat the egg yolks well
  3. Add the lime juice and water to the egg yolk mixture
  4. Stir the egg yolk mixture into the gelatin mixture
  5. Cook over low heat, stirring constantly, just until the mixture comes to a boil
  6. Remove from heat
  7. Stir in grated peel
  8. Chill, stirring occasionally, until the mixture mounds slightly when dropped from a spoon
  9. Beat the egg whites until soft peaks form
  10. Gradually add the remaining sugar, beating until stiff
  11. Fold into the chilled gelatin mixture
  12. Fold in whipped cream
  13. Pour into the baked crust
  14. Chill until firm
