Curried Sweet Potato Bisque

Ingredients

  • Olive Oil
  • Onion
  • Curry Powder
  • Ground Allspice
  • Water
  • Low Sodium Chicken Broth
  • Sweet Potatoes
  • Salt
  • Plain Fat-free Yogurt
  • Fresh Chives

Instructions

  1. Heat olive oil in a dutch oven over medium-high heat
  2. Add onion
  3. Saut 2 minutes
  4. Stir in curry and allspice
  5. Cook 1 minute
  6. Add water, broth, sweet potato, and salt
  7. Cook 25 minutes or until potato is tender
  8. Place half of sweet potato mixture in a blender
  9. Process until smooth
  10. Repeat procedure with remaining sweet potato mixture
  11. Return pured sweet potato mixture to pan
  12. Bring bisque to a boil
  13. Remove from heat
  14. Stir in 1 cup yogurt until blended
  15. Top each serving with about 1 tablespoon yogurt
  16. Garnish with chives, if desired
