Curried Snap Peas And Mushrooms

Bought too much…had to come up with an idea and this was it! This will freeze well too.

Ingredients

  • Mushrooms
  • Snap Peas
  • Onion
  • Salt
  • Garlic Powder
  • Chili Powder
  • Curry Powder
  • Coriander Powder
  • Black Pepper
  • Low Sodium Chicken Broth
  • Olive Oil
  • Butter

Instructions

  1. In large skillet, heat oil and butter to just sizzle stage
  2. Add mushrooms and immediately toss
  3. Mushrooms will soak up most of the oil
  4. Season with garlic powder, salt and pepper
  5. Cook on medium-high 3-5 minutes, stirring often
  6. Add rest of seasonings and onion
  7. Lower heat to medium
  8. Stir well
  9. Add snap peas and chicken broth
  10. Stir well
  11. Cover and simmer 5 minutes
  12. Remove from heat and allow to finish cooking off heat, covered, without stirring another 5 minutes
  13. Snap peas and onions will be crisp-tender
  14. Serve
