This has gotten rave reviews at family picnics in the past. It is a refreshing change from the standard meat-salads used for sandwiches and is relatively easy to make. Pita pockets are the recommended

Ingredients

  • Reduced-calorie Mayonnaise
  • Plain Low-fat Yogurt
  • Curry Powder
  • Salt
  • Ground Red Pepper
  • Garlic
  • Cooked Chicken
  • Green Onions
  • Sweet Green Peppers
  • Golden Delicious Apples
  • Fresh Cilantro
  • Lettuce Leaf
  • Whole Wheat Pita Bread

Instructions

  1. In a medium-size bowl, whisk together the mayonnaise, yogurt, curry powder, salt, ground red pepper, and garlic
  2. Stir in the chicken, green onions, green pepper, apple, and cilantro
  3. Tuck several lettuce leaves into each pita half, then stuff with the filling
  4. Cover with plastic food wrap and chill until ready to serve
  5. Will keep, refrigerated, for up to 2 days
