Crockpot Dulce De Leche Sweet Potato Pudding Cake

Ingredients

  • Unsalted Butter
  • All-purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Ground Cinnamon
  • Brown Sugar
  • Sweet Potatoes
  • Eggs
  • Vanilla Extract
  • Coconut Milk
  • Pecans
  • Dulce De Leche
  • Flaked Coconut

Instructions

  1. Melt butter in a small saucepan over medium heat
  2. Cook, whisking constantly, until butter foams and starts to turn golden brown
  3. Place browned butter in a large mixing bowl
  4. In a medium mixing bowl, sift together flour, baking powder, baking soda, salt and cinnamon
  5. Whisk until combined
  6. Add brown sugar and sweet potato to mixing bowl with browned butter
  7. Beat, using a mixer on medium speed, until creamy – about 1 minute
  8. Beat in eggs and vanilla until combined – about 1 minute
  9. Reduce mixer speed to low and gradually beat in flour mixture, alternating with coconut milk until just combined
  10. Stir in pecans until combined
  11. Spray a slow cooker with cooking spray
  12. Spread batter evenly into slow cooker
  13. Cover and cook on low for 45 minutes
  14. Pour dulce de leche on top, sprinkle with coconut, cover, and cook an additional 1 hour
  15. Turn slow cooker off and allow to cool 45 minutes before serving
