Crockpot Brazilian Chicken Curry Paleo

Ingredients

  • Chicken Breasts
  • Coconut Milk
  • Chicken Broth
  • Tomato Paste
  • Garlic Cloves
  • Ground Ginger
  • Curry Powder
  • Bell Peppers
  • Yellow Onion
  • Salt And Pepper
  • Red Pepper Flakes

Instructions

  1. Cut chicken pieces in half or quarters
  2. Combine coconut milk, tomato paste, garlic, ginger, curry powder, salt and pepper, and red pepper flakes in the crockpot and whisk together
  3. Add in peppers, chicken, and broth
  4. Mix all ingredients together to completely cover the chicken in the curry mixture
  5. Cover and cook at low for 6-8 hours or high for 4-5 hours
