Another kitchen heat-saver for the dog days of summer. Can you say "tender and fall-apart delicious", boys and girls?

Ingredients

  • Fryer Chickens
  • Unsalted Butter
  • Onion
  • Celery
  • Sliced Mushrooms
  • Seasoned Stuffing Mix
  • Dried Parsley Flakes
  • Sage
  • Fresh Ground Pepper
  • Chicken Broth
  • Paprika

Instructions

  1. Rinse the chicken well and pat dry
  2. Remove any excess fat
  3. In a skillet, melt cup butter
  4. Saut the onion, celery, and mushrooms until tender
  5. Toss in the stuffing mix, 2 tablespoons parsley flakes, sage, pepper and broth
  6. Stir until the stuffing is thoroughly moistened
  7. Loosely stuff the chicken with the dressing
  8. If you like, truss the chicken to keep its shape
  9. Put the remaining dressing in a lightly oiled crock pot
  10. Place the chicken on top of the dressing
  11. Rub the chicken breast with 1 teaspoon butter
  12. Sprinkle with paprika and parsley flakes
  13. Cover and cook on low setting for 8 to 10 hours
