Crock Pot Pasta With Lentils And Chard

Ingredients

  • Swiss Chard
  • Lentils
  • Onion
  • Garlic Cloves
  • Cumin Seed
  • Crushed Red Pepper Flakes
  • Fresh Coarse Ground Black Pepper
  • Water
  • Dry Linguine
  • Salt
  • Neufchatel Cheese
  • Parmesan Cheese

Instructions

  1. Rinse and drain chard well
  2. Trim off coarse stem ends
  3. Then cut stems crosswise into 1 / 4-inch-wide strips and set aside
  4. Cover chard leaves and refrigerate
  5. In a 3-quart or larger electric cooker, combine chard stems, lentils, onion, garlic, cumin seeds, red pepper flakes, and black pepper
  6. Pour in water
  7. Cover and cook at low setting until lentils are tender when mashed with a fork
  8. Cut chard leaves crosswise into 1 / 2-inch-wide strips
  9. Stir into cooker
  10. Increase heat setting to high
  11. Cover and cook until chard is wilted and bright green
  12. Meanwhile, in a 5 to 6-quart pan, cook linguine in 3 quarts boiling water just until tender to bite
  13. Or cook according to package directions
  14. Drain well, pour into a warm wide 4-quart bowl
  15. Season lentil sauce to taste with salt
  16. Add lentil sauce and neufchatel cheese to linquine, mix lightly to coat well
  17. Offer parmesan cheese to add taste, if desired
