Ingredients

  • Lentils
  • Pearl Barley
  • Black-eyed Peas
  • Beef Broth
  • Water
  • Diced Tomatoes
  • Zucchini
  • Onion
  • Carrots
  • Celery
  • Mushrooms
  • Italian Seasoning
  • Garlic
  • Bay Leaves
  • Salt
  • Pepper
  • Crushed Red Pepper Flakes

Instructions

  1. Combine beans, broth, and water in a large crockpot and cook on high for 4-5 hours or until beans are tender
  2. Add remaining ingredients and cook on low for 4 to 5 hours or until vegetables are tender
  3. Yummy topped with grated parmesan cheese
