Crock Baked Soybeans

Use a medium or large slow cooker. Cooking time includes soaking of the beans.

Ingredients

  • Dried Soybeans
  • Water
  • Yellow Onion
  • Light Brown Sugar
  • Molasses
  • Salt
  • Dry Mustard
  • Toasted Sesame Oil

Instructions

  1. Rinse beans in colander under cold water
  2. Pick over for damaged beans and small stones
  3. Transfer to the slow cooker
  4. Cover with cold water by 2 inches, soak overnight, and drain
  5. Cover with the 4 cups water
  6. Cover and cook on high until tender, about 4 hours
  7. The beans need to be covered with liquid at all times to cook properly
  8. Drain the cooked beans and return to the slow cooker
  9. Add the onion, brown sugar, molasses, salt, mustard, and sesame oil
  10. Stir to combine
  11. Cover and cook on low for 5 to 6 hours, until soybeans are flavorful but still moist and the onion is soft
  12. Stir gently so as not to mash the beans and serve hot
