This fabulous french breakfast looks really fancy, but is oh so simple! You will love the rich, creamy cheese combined with the fruity sweetness of fresh strawberries, all wrapped in a delicate french crepe and drizzled with light sour cream sauce! Ooo la la!

Ingredients

  • Flour
  • Milk
  • Eggs
  • Vegetable Oil
  • Salt
  • Baking Powder
  • Vanilla
  • Lemon Juice
  • Low-fat Ricotta Cheese
  • Sugar
  • Light Sour Cream
  • Fresh Strawberries

Instructions

  1. Create filling and toppings first
  2. Blintz: combine ricotta and sweetener
  3. Cover and place in fridge
  4. Topping: combine sour cream and sweetener
  5. Cover and place in fridge
  6. Fruit: wash strawberries, remove stems and slice
  7. Cover and place in fridge
  8. Crepes: combine all crepe ingredients with a whisk until smooth
  9. Heat a lightly greased 6-8 inch skillet over medium-high heat
  10. Remove from heat
  11. Pour 2 tablespoons of batter into center of skillet
  12. Lift and tilt skillet to spread batter and coat bottom of pan
  13. Return to heat
  14. Cook for 1 minute or until light brown
  15. Turn with a spatula, and cook second side for 30 seconds
  16. Slide finished crepes onto paper towels
  17. Spoon equal amount filling down center of each crepe
  18. Fold in ends, then sides, roll
  19. Top with fresh strawberries, drizzle with sour cream topping
  20. Bon appetite!
