Creole Eggs

English muffins topped with hard-coiled egg slices and a tasty tomato based sauce. This is done in the microwave, so is quick. Cooking times listed are approximate, depending on wattage of your microwave.

Ingredients

  • Onion
  • Green Bell Pepper
  • Celery Ribs
  • Garlic Cloves
  • Bay Leaf
  • Unsalted Butter
  • Diced Tomatoes
  • Tomato Juice
  • Worcestershire Sauce
  • Louisiana Hot Sauce
  • Paprika
  • Cornstarch
  • English Muffins
  • Hard-boiled Eggs

Instructions

  1. Place onion, bell pepper, celery, garlic, bay leaf and butter in a 2 quart glass measure
  2. Cover with plastic wrap
  3. Cut a small slit in plastic wrap to vent
  4. Microwave on high for 4 minutes
  5. Drain liquid from tomatoes into a small bowl
  6. Set aside
  7. Add tomatoes to vegie mixture in the glass measure
  8. Add tomato juice, worcestershire sauce, hot sauce and paprika
  9. Stir well
  10. Cover again and microwave on high for 3 minutes
  11. Remove bay leaf
  12. Using a small wire whisk, blend cornstarch into reserved tomato liquid
  13. Stir mixture into heated sauce
  14. Cover again
  15. Stirring midway through cooking, microwave on high for 3 minutes or until sauce is bubbly and thickened
  16. Toast muffins, place 2 halves on each plate, and top with sliced eggs
  17. Top with sauce
  18. Serve immediately
