Creamy Tortellini With Spinach

Description

This is a nice, summery dish. Very pretty presentation too! The sauce is creamy with a hint of lemon. Very quick to put together as well!

Ingredients

• Cheese Tortellini
• Milk
• Cream Cheese
• Parmesan Cheese
• Lemon, Zest Of
• Baby Spinach Leaves
• Tomatoes
• Nutmeg
• Salt And Pepper

Instructions

1. Cook tortellini as directed on package
2. Meanwhile, cook cream cheese and milk on medium heat until cream cheese is melted and mixture is well blended, stirring occasionally
3. Stir in 4 tablespoons of the parmesan cheese and the lemon peel
4. Add spinach
5. Stir until coated and wilted
6. Drain pasta
7. Add to spinach mixture in skillet
8. Mix lightly
9. Sprinkle with tomatoes and remaining 2 tablespoons parmesan cheese just before serving
