Cream Of Tomato Basil Soup

This is a quick recipe that is great served with a green salad and french bread with garlic butter....excellent! I add more garlic than the recipe calls for and it just gets better!

This is a quick recipe that is great served with a green salad and french bread with garlic butter….excellent! I add more garlic than the recipe calls for and it just gets better!

Ingredients

  • Olive Oil
  • Shallots
  • Garlic
  • Condensed Chicken Broth
  • Water
  • Chopped Tomatoes
  • Fresh Basil
  • Salt & Pepper
  • Heavy Cream

Instructions

  1. Heat oil in heavy saucepan
  2. Add shallots and garlic and saut over med-low heat 2-3 minutes — be careful not to burn garlic
  3. Stir in broth, water, tomatoes and basil
  4. Add salt and pepper
  5. Heat cream till just warm then stir into tomato mixture
  6. Bring just to a boil
  7. Immediately reduce heat and simmer 5 minutes
  8. If using fresh basil, stir in at this point
  9. Do not allow soup to boil
  10. Serve immediately
