I got this recipe from a friend in my recipe club. It was such a hit with my family that i served it for company with rave reviews. My usually finicky son could not get enough of it. Everyone wanted the recipe and there were no leftovers.

Ingredients

  • Butter
  • Onion
  • Green Onion
  • Parsley
  • Garlic
  • Crabmeat
  • Creole Seasoning
  • Flour
  • Hot Sauce
  • Clam Broth
  • Medium Cheddar
  • Mozzarella Cheese

Instructions

  1. Pre-heat oven to 350f
  2. Melt 4 tbsp butter in medium size saucepan
  3. Add onions, green onions and parsley
  4. Saut until onion is clear
  5. Stir in garlic, crabmeat, creole seasoning, and hot sauce
  6. Reduce heat to low and continue cooking
  7. In a separate saucepan, melt remaining butter over medium heat, add 2 tbsp flour and lightly brown, stirring occasionally
  8. Slowly add stock and continue cooking until mixture begins to thicken
  9. Add of cheddar cheese, stir until melted
  10. Pour mixture into crab and carefully stir
  11. Turn into greased casserole and top with remaining cheddar and mozzarella
  12. Bake 20 to 30 minutes
  13. Serve hot as a main course or with toasted french bread or crackers for a great hot appetizer
