These taters are browned till crispy–j ust the way i love them.

Ingredients

  • Bacon Grease
  • Green Onion
  • Potatoes
  • Flour
  • Salt
  • Pepper
  • Milk

Instructions

  1. Using 1 tablespoon of the bacon grease, in an iron skillet or a heavy skillet, saut green onion till tender but not brown
  2. Put potatoes in a large bowl
  3. Add flour, salt and pepper
  4. Stir till mixed well
  5. Add onions and milk and mix till combined well
  6. Heat remaining bacon grease in the skillet you sauted the onions inches
  7. Pour potato mixture into skillet and using a pancake turner, press the potatoes down firmly all around pan till all potatoes are evenly distributed and firmly pressed down
  8. Cooking on low heat, cook till browned lightly
  9. Turn and cook till browned on other side
  10. When crispy and brown, remove to platter and serve hot
