Ingredients

  • Pizza Dough
  • Butter
  • Garlic Cloves
  • Panko Breadcrumbs
  • Sweetened Flaked Coconut
  • Eggs
  • Small Shrimp
  • Canola Oil
  • Mozzarella Cheese
  • Red Fresno Chile
  • Pineapple
  • Red Onion
  • Scallions
  • Kosher Salt
  • Ground Black Pepper

Instructions

  1. Equipment:
  2. Baking sheet with parchment
  3. Skillet
  4. Wood cutting board
  5. Heat oven to 425 degrees f
  6. Line a baking sheet with parchment paper
  7. Unroll pizza dough and place on prepared baking sheet, stretching to make into a rectangle
  8. In a small saucepan, melt butter over medium heat with garlic
  9. Brush melted garlic butter on dough and bake for 8 minutes
  10. Set aside
  11. In a shallow dish, stir to combine panko, shredded coconut, 1 / 2 teaspoon salt and 1 / 8 teaspoon pepper
  12. Place eggs in a separate shallow bowl or dish and beat with a whisk
  13. Coat shrimp in egg then coat in panko and coconut
  14. Place on a plate or tray
  15. Heat canola oil in a medium skillet over medium heat
  16. Cook shrimp until lightly golden, about 1-2 minutes per side
  17. Drain cooked shrimp on a towel-lined plate
  18. To prepare pizza, top crust with half of the shredded mozzarella, chilis, pineapple, red onion and coconut shrimp
  19. Sprinkle over remaining cheese and bake until crust is golden and cheese is melted, about 6-10 minutes
  20. Transfer to a cutting board and garnish with chopped scallions
