Cinnamon Cucumber Rings

Ingredients

  • Cucumbers
  • Lime Juice
  • Alum
  • Vinegar
  • Red Food Coloring
  • Cinnamon Sticks
  • Water
  • Red-hot Candies
  • Sugar

Instructions

  1. Peel and slice cucumbers into 1 / 4 inch rounds
  2. Remove seeds
  3. Cover cucumbers and lime juice with water and soak for 24 hours
  4. Drain and rinse 4 times
  5. Soak in cooled water for 3 hours
  6. Combine alum, 1 cup vinegar and red food coloring
  7. Put over cucumbers and add enough water to cover
  8. Boil, then simmer for 2 hours
  9. Drain and throw away the solution
  10. Combine 2 cups vinegar, cinnamon, water, red hots and sugar
  11. Bring to boil and pour over rings
  12. Let set 24 hours
  13. Drain and boil liquid again
  14. Place rings in jars and pour hot liquid over rings and seal
