Cilantro Lime Pork Roll Ups With Caramelized Onions

Ingredients

  • Lime Zest
  • Fresh Lime Juice
  • Garlic Cloves
  • Fresh Cilantro
  • Crushed Red Pepper Flakes
  • Olive Oil
  • Boneless Pork
  • Onions
  • Fat-free Refried Beans
  • Flour Tortillas
  • Monterey Jack Pepper Cheese
  • Salsa
  • Sour Cream

Instructions

  1. In large resealable food-storage plastic bag, mix lime peel, lime juice, garlic, cilantro, red pepper flakes and 1 tablespoon of the oil
  2. Add pork
  3. Seal bag and turn to coat with lime mixture
  4. Refrigerate 30 minutes to 2 hours to marinate
  5. In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium heat
  6. Add onions
  7. Cook 7 to 10 minutes, stirring frequently, until onions turn golden brown
  8. Remove onions from skillet
  9. Keep warm
  10. Heat oven to 375f
  11. Remove pork from marinade
  12. Drain pork on paper towels to remove excess moisture
  13. Discard marinade
  14. In same skillet, heat 1 tablespoon of the oil over medium-high heat
  15. Add pork
  16. Cook 5 to 7 minutes, stirring occasionally, until no longer pink in center
  17. Remove skillet from heat
  18. Set aside
  19. Brush 1 tablespoon oil on bottom and sides of 13×9-inch glass baking dish or 2 glass baking dishes
  20. In medium microwavable bowl, place refried beans
  21. Cover with microwavable paper towel
  22. Microwave on high about 1 minute or until warm
  23. To assemble, spoon 2 tablespoons beans down center of each tortilla
  24. Top with pork, onions and cheese
  25. Roll up tortillas
  26. Place seam sides down in baking dish
  27. Lightly brush remaining 1 tablespoon oil over tortillas
  28. Bake uncovered 18 to 24 minutes or until edges of tortillas are golden brown
  29. Serve with salsa and sour cream
