Chinese style skewered chicken

Ingredients

  • Tomato Sauce
  • Light Brown Sugar
  • Soy Sauce
  • Fresh Ginger
  • Garlic
  • Boneless Chicken Breasts
  • Bamboo Skewers
  • Green Bell Peppers
  • Onions
  • Olive Oil
  • Cooked Rice

Instructions

  1. In a bowl, mix the tomato sauce, brown sugar, soy sauce, ginger and garlic
  2. Stir in the chicken
  3. Cover and refrigerate 2 to 8 hours
  4. Heat the broiler
  5. Skewer the chicken and broil 7 to 10 minutes or until lightly browned
  6. Turn and broil 7 minutes longer or to desired doneness
  7. Meanwhile, in a medium skillet, saute the bell peppers and onions in the olive oil for 5 minutes
  8. Serve the chicken and vegetables over the rice
