Chicken Tagine With Chickpeas And Mint

Ingredients

  • Olive Oil
  • Onion
  • Garlic Cloves
  • Fresh Ginger
  • Paprika
  • Turmeric
  • Ground Coriander
  • Ground Cumin
  • Cayenne Pepper
  • Ground Cinnamon
  • Water
  • Chickpeas
  • Diced Tomatoes With Juice
  • Fresh Cilantro Stem
  • Lemon
  • Fresh Lemon Juice
  • Chicken Legs-thighs
  • Boneless Skinless Chicken Breasts
  • Carrots
  • Green Beans
  • Of Fresh Mint

Instructions

  1. Heat oil in heavy large pot over medium heat
  2. Add onion, garlic and ginger
  3. Cover and cook until onion is tender, stirring often, about 10 minutes
  4. Add paprika and next 5 ingredients
  5. Stir 1 minute
  6. Stir in 2 cups water, chickpeas, tomatoes with juices, cilantro, lemon and 2 tablespoons lemon juice
  7. Bring to a boil
  8. Reduce heat, cover and simmer 10 minutes
  9. Sprinkle chicken with salt and pepper, add to pot
  10. Cover and simmer 30 minutes
  11. Add carrots and more water to cover if liquid has evaporated
  12. Cook 10 minutes
  13. Stir in green beans
  14. Simmer until chicken and vegetables are tender, about 5 minutes longer
  15. Season with salt and pepper and more lemon juice, if desired
  16. Transfer to bowl
  17. Sprinkle with mint
