This recipe came from the local paper. It is a quick skillet supper, with layers of flavours. It's one of our favourites!
The ingredients list may look long, but it really is a quick easy dish to put together after work.
Ingredients
- Boneless Skinless Chicken Breast Halves
- Lime
- Ginger
- Curry Powder
- Garlic Clove
- Oil
- Onion
- Rice
- Water
- Peaches
Instructions
- Cut chicken ito bite size pieces
- Brown in 1 tablespoon of oil in a large skillet
- Meanwhile zest lime and then juice into a small bowl
- Add to juice and zest, ginger, curry, & garlic
- Remove chicken from pan
- Add 1 tablespoon of oil and onion, cook 2-3 minutes
- Add rice and curry mixture
- Open peaches and drain juice into a large measuring cup
- Add water to juice until it measures 2 1 / 2 cups of liquid
- Stir into the rice, add chicken on top of rice
- Cover and simmer 25 minutes
- Add peaches to mix, cook one minute to warm peaches
- Serve & enjoy!
