Chicken Pumpkin Stew

This is a hearty, rich, delicious dish to make on a chilly night, or just whenever you want some warm comfort food. I got this out of a magazine awhile ago and i'm so glad i saved it!

This is a hearty, rich, delicious dish to make on a chilly night, or just whenever you want some warm comfort food. I got this out of a magazine awhile ago and i'm so glad i saved it!

Ingredients

  • Oil
  • Boneless Skinless Chicken Thighs
  • Onion
  • Red Pepper
  • Garlic
  • Chicken Broth
  • Diced Tomatoes
  • Smoked Paprika
  • Salt
  • Sugar Pumpkin
  • Fresh Green Beans
  • Cornstarch
  • Creamy Peanut Butter

Instructions

  1. Heat oil in large saucepan over medium-high heat
  2. Add chicken
  3. Saute 4 minutes or until browned and remove to a plate
  4. Reduce heat to medium and add onions, red pepper pieces, and garlic
  5. Saute 4 minutes until softened
  6. Add 1 1 / 2 cups broth, the tomatoes, paprika and salt
  7. Bring to a boil
  8. Then add chicken, pumpkin and beans
  9. Reduce heat, cover and simmer 12 minutes or until chicken and pumpkin are tender
  10. Meanwhile stir remaining broth, the cornstarch and peanut butter in a bowl until smooth
  11. Add to pot and stir until blended
  12. Cook 2 minutes or until thickened
  13. Enjoy!
  14. Great with some nice crusty bread for dipping, yum 🙂
