Chicken Potato And Spinach Curry

Ingredients

• Spinach
• Oil
• Onion
• Curry Paste
• Potato
• Chicken Stock
• Fillets
• Salt
• Lime Juice

Instructions

1. Heat 2 tablespoons oil and add the onion, curry paste and the potato
2. Stir until potato starts to brown, about 5 minutes
3. Add the stock and bring to a rapid boil
4. Add the chicken and the spinach
5. Reduce the heat and simmer, covered, for 7 minutes
6. Season with salt and fresh lime juice
