Chicken Mushroom And Cheese Quesadillas

In my opinion, you can't get a better flavor combination than chicken, mushrooms and onions sauteed together. Mmmmm! This recipe is adapted from cooking light magazine.

Ingredients

  • Olive Oil
  • Ground Cumin
  • Salt
  • Black Pepper
  • Boneless Skinless Chicken Breasts
  • Onion
  • Sliced Mushrooms
  • Garlic Clove
  • Flour Tortillas
  • Cheddar Cheese

Instructions

  1. Heat olive oil in a large nonstick skillet over medium-high heat
  2. Combine ground cumin, 1 / 8 teaspoon salt, and 1 / 8 teaspoon black pepper
  3. Sprinkle over chicken
  4. Add chicken to pan, and saut 5 minutes or until browned
  5. Remove chicken from pan
  6. Set aside
  7. Add onion, mushrooms, garlic, 1 / 8 teaspoon salt, and 1 / 8 teaspoon black pepper to pan
  8. Saut 5 minutes
  9. Remove from pan
  10. Let stand 5 minutes
  11. Wipe pan with paper towels
  12. Heat pan over medium heat
  13. Sprinkle each tortilla with about 1 / 3 cup cheese
  14. Arrange 1 / 2 cup mushroom mixture over one-half of each tortilla
  15. Arrange chicken evenly over mushroom mixture
  16. Carefully fold each tortilla in half
  17. Add 2 quesadillas to pan
  18. Cook 2 minutes on each side or until lightly browned and cheese melts
  19. Repeat procedure with remaining quesadillas
  20. Serve immediately
