Chicken Burgers With Blue Cheese Mayo

Ingredients

  • Skinless Chicken Thighs
  • Streaky Bacon
  • Olive Oil
  • Garlic Clove
  • Shallot
  • Fresh Tarragon
  • Fresh White Breadcrumbs
  • Egg Yolk
  • Dijon Mustard
  • Light Olive Oil
  • White Wine Vinegar
  • Blue Cheese
  • Fresh Chives
  • Hamburger Buns

Instructions

  1. Cut chicken thigh into pieces and put into food processor
  2. Cut 2 bacon rashers into pieces and add to the chicken
  3. Blend until coarsely chopped
  4. Heat the olive oil in a fry pan and add the garlic and shallot
  5. Cook for about 2 mins, until soft
  6. Remove from the pan, drain of excess oil and leave to cool
  7. Add the garlic, shallot, tarragon and breadcrumbs to the chicken mixture
  8. Season well and mix to combine
  9. Divide mixture into four and with lightly floured hands shape into four burgers
  10. Chill for 30 minutes
  11. For the mayo-
  12. Whisk the egg yolk, mustard and plenty of seasoning in a bowl until smooth
  13. Slowly whisk in the olive oil until the mixture is thick and smooth
  14. Whisk in the vinegar, crumble in the blue cheese and fold it into the mayo with the chives
  15. Chill
  16. Grill the remaining bacon until crisp, cook the burgers on a medium heat for about 15 mins, turning once
  17. Toast the buns
  18. Arrange salad leaves on one half of the buns, top with chicken burger, spoonful of mayo and bacon rasher, then the top of the bun
  19. Serve!
