This is so good. I usually use a whole cut up chicken.

Ingredients

  • Chicken Legs
  • Water
  • Celery Ribs
  • Onion
  • Chicken Bouillon Cubes
  • Salt
  • Pepper
  • Cream Of Chicken Soup
  • 8-inch Flour Tortillas

Instructions

  1. Bring first 7 ingredients to a boil in a large dutch oven
  2. Cover, reduce heat, and simmer 45 minutes or until chicken is tender
  3. Remove chicken, reserving broth in dutch oven
  4. Let chicken and broth cool
  5. Skin, bone, and cut chicken into bite-size pieces
  6. Set aside
  7. Skim fat from broth
  8. Add soup to broth
  9. Bring to a boil
  10. Cut tortillas into 2- x 1-inch strips
  11. Add strips, 1 at a time, to briskly boiling broth mixture
  12. Add chicken, reduce heat, and simmer 10 minutes, stirring often to prevent dumplings from sticking
  13. Quick
  14. Proceed with recipe using 3 to 4 cups chopped cooked chicken
